If an item is 86&#8217;d, there is no more of that item. During a busy shift, such terms bounce from frantic server to frantic server and stretched chef to stretched chef like electricity between &#8220;tensing synapses.&#8221; Chelsea Blakely seems to have known a few dinner rushes, and her poem, &#8220;Trade,&#8221; vividly captures the interior experience of trying to keep it together while slinging food. Punctuation is sparse, and when it does appear it marks the mood or tone rather than ends of ideas. Reading the poem aloud, there&#8217;s space for one, maybe two breaths, you see flashes of scenery, you have no idea what&#8217;s going on, and it just goes and goes until it doesn&#8217;t.
